Tortellini
Fresh Tomato and Pea Salad
Stuffed pasta (tortellini) and
fresh tomatoes, Italian style, is always a good combo. For instance,
making this salad is a simple matter of tossing fresh tomato chunks with
two tasty products -- cheese tortellini and peas -- from the freezer case.
Tortellini Fresh Tomato
and Pea Salad
450 g (1 lb) frozen cheese tortellini
250 ml (1 cup) frozen peas
60 ml (4 tbsp) prepared Italian or balsamic salad dressing, divided
2 large, fully ripened fresh tomatoes, cut in chunks (about 625
ml/21/2 cups)
250 ml (1 cup) salad greens, such as watercress, arugula or mixed
greens
125 ml (1/2 cup) diced sweet onion
Procedure
Cook tortellini according to package directions, adding peas during
the last 30 seconds; drain, place in a bowl. Add 30 ml (2 tbsp) of salad
dressing; toss gently, cool. Just before serving, add tomato, salad
greens, onion and remaining 30 ml (2 tbsp) salad dressing; toss gently.
Yield: 4 to 6 portions.
